Edinburgh college apprentice restaurant vegan night

I went to the Edinburgh college apprentice restaurant for the first time last week and oh my what a treat! Everything was absolutely delicious and it is up there with some of the nicest food I’ve ever eaten! And it was only ¬£15 for alllll this yummy amazingness! …All you Chefs out there still serving up a plate of unimaginative and frankly embarrassing limp lettuce leaves and bland fruit cocktails – take note! And be inspired!

Clockwise from top left: cheese, fig & caramelised onion tartlet; cheese & mushroom fritter with escalivada; gazpacho with watermelon; wild mushroom & salsify risotto with asparagus tips & sweet potato crisp; fruity chocolate plate for dessert rounded off with tea or coffee and petit fours.
They make everything from scratch.. They even made their own cheese! ..incredible training for the up and coming chefs of the future!
{Escalivada I’ve just discovered is a traditional Spanish dish of smoky grilled vegetables. And I can now also add salsify to my repertoire of foodie knowledge which¬† is a plant cultivated for its ornamental flower, edible root, and herbal properties}
